Recipe - Citrus Salad with Champagne Dressing

Are you here because of the champagne dressing? Me too ;)

As salads should be, this is easy, fresh, and delicious. If you’re searching for a salad for festive season entertaining, I think the pop of colour in this, teamed with the champagne dressing, ticks all the boxes.


For the salad -

Rocket leaves

Blood orange




Meredith goats feta

Mint leaves

For the champagne dressing -

1/3 cup Champagne vinegar (I found mine at The Essential Ingredient)

1 Clove garlic, crushed

2 tsp Lemon juice

¼ cup Olive oil

Salt to taste


Arrange your rocket leaves, and sliced orange, blood orange, and lime, over a salad dish. I sliced the rind off my citrus fruits to create a hexagonal effect. Add avocado cubes and feta, and sprinkle over some mint leaves.

For the champagne dressing, combine the vinegar, garlic, lemon juice, and olive oil. Add salt to taste.

Pour your dressing over the salad just before serving.
